Inside The Colony's open kitchen, with its kiawe wood-grille, chefs put the sizzle into a mouth-watering range of premium aged Kobe beef, New York strip steak, rib eye and filet mignon, the latter with the zing of a citrus yuzu sauce. The a la carte accompaniments of a traditional steak house vary from a Big Island Hamakua Alii mushroom ragout with port demi-glace to a classic baked potato or updated trio of mashed potatoes: russet, sweet or Peruvian.
