1992 was the year that Bret Sawyer and Ed Routhier shook up the Mexican fast food industry with their 1st Rock'N Tacos restaurant. These were fun-spirited restaurants that brought the healthy lifestyle of the Baja California coast to metropolitan areas. Traditional recipes were revamped to cut the fat, but not the flavor. Consumers appreciated the taste of homemade meals always prepared with grilled seafood, fresh produce, whole grains and tantalizing spices. Baja California favorites such as shark burritos were introduced and the public took a healthy bite.
